Executive Chef Chris Coleman is an artist. His canvas: your plate; his paint: delicious food; his studio: for two years now has been Petaluma on NYC's Upper East Side.
Chef Coleman lives by the motto, "Watch what happens and let the truth be told. My food speaks for itself." That food includes Calamari with Cocktail and Tartar Sauces, Buffalo Mozzarella and Braised Tomato, Chef Coleman's Springtime Chopped Salad, Pan Seared Crushed Walnut and Pine Nut Encrusted Halibut on Sautead Spinach, and Grilled New Zealand Rack of Lamb with Carmelized French Onions in a Red Wine Vinegar Sauce atop Grilled Veggies, all cooked in a wood oven, just to name a few.
This Chopped star, who also happens to be a 5 time Panamanian Golden Glove champ, was brought to Petaluma to liven up the menu. Upon taking over, Chef Coleman utilized his Jamaican and Panamanian background to add texture and flavor to the Italian and Mediterranean cuisine.
Perhaps you've heard of Tao, Claudio's in the Hamptons and Nick's of Montauk? Those are just a few of the high end restaurants that span Chef Coleman's impressive career. Working for 12 years in the Hamptons, Chef Coleman knows how to please even the most persnickety of palettes.
Chef Coleman gets weekly manicures and insists that he would never feed someone something that he wouldn't eat himself. He is being considered for Iron Chef, on the Food Network, and is in pre-production for a book that will "change the way people communicate at the dinner table."
